Amazing Raw "Peanut" Sauce by Natalia Rose
This is one of our absolute favorite raw recipes. It tastes just like an authentic Thai peanut sauce (without using any peanuts), and can be used in SO many ways: salad dressing, marinade, on pasta or baked potatoes.
MAKES 2 CUPS
1 cup raw almond butter
2 Tbs. fresh ginger, whole or chopped
1/2 cup water (to thin)
4 Tbs. fresh lemon juice
1/4 cup pure maple syrup
3 Tbs. Nama Shoyu soy sauce
4 tsp. sesame oil
2 to 3 cloves garlic
1/2 serrano or jalapeno chile
Blend all ingredients at high speed until smooth. This makes an unbelievable dipping sauce for carrots or other vegetables, and it tastes amazing as a salad dressing or a sauce over young coconut noodles!
